BUTTER RICE
Ingredients
25 grams of unsalted butter
1/2 tbsp vegetable oil
1 onion medium size, thinly sliced
4 grams fresh ginger, finely chopped
3/4 tsp salt or salt to taste
400 ml of water

Butter rice is an aromatic, mild and flavourful rice dish. A simple dish to make with butter, onions, Anchan's spice mix and one of the finest hand picked basmati rice. Butter rice can be served with any curry.

Rinse the rice until water runs clear. Drain the rice and set aside.

In a heavy bottom non-stick pan heat oil and butter, when the butter melts add Anchan's spice mix 1 and cook for 15 seconds.

Add sliced onion, cook stirring regularly until onions are light golden.

Add chopped ginger and Anchan's spice mix 2, cook for 30 seconds.

Add 400 ml of water, salt and rice, Mix well and bring it to a boil.

Turn the heat to medium, cook the rice stirring occasionally until water reduces to a level of rice in the pan.

Turn the heat to low, cover the pan with lid and cook for 8 minutes or until the water is absorbed.

Turn off the heat, with the lid on let the rice cook in its steam for further 15 minutes.

Gently puff up the rice with fork.

Serve with your choice of curry.
