Onion Bhaji is a popular street food from state of Karnataka, southern India. It’s a deep-fried snack made from two main ingredients, onions and gram flour. To take it to the next level, at Anchan’s we have worked to create a unique spice mix to make it a brilliant appetizer. It’s similar to fritter or tempura but with the inclusion of our spice mix the emerging flavours are just irresistible.

ONION BHAJI
Ingredients
2 onions medium size thinly sliced (200 g)
2 tbsp of coriander leaves finely chopped
1 green chilli deseeded and finely chopped (optional)
1 tbsp water
1 tbsp rapeseed oil or vegetable oil
3/4 tsp salt or salt to taste
Rapeseed oil or vegetable oil for frying
Cooking Steps
STEP 1

To a bowl add the onions, coriander leaves, green chilli (optional) and salt, mix well applying gentle pressure.

Rest the onions for 15 minutes.

Add Anchan's onion bhaji mix, 1 tbsp oil and 1 tbsp water to the above mixture and combine well using clean hands.
STEP 2

Heat oil in a deep frying pan or wok to 170°C over medium to high heat (oil level just half of a pan or wok).

Turn the heat to medium to low, using a dessert spoon scoop a spoon full onion bhaji batter and carefully drop into the oil using another spoon. Fry 5 to 6 bhaji's at a time.

Fry the bhaji's by turning them regularly for 5-7 minutes or until the bhaji's are evenly golden brown.

Drain the fried onion bhaji's on kitchen paper.

Serve them hot with tomato ketchup, yogurt or salads.
