Paneer Tikka Masala is a vegetarian dish and a popular Indian curry where marinated and grilled pieces of paneer are simmered in a spiced tomato based creamy sauce. Paneer is a mild Indian cottage cheese a good source of protein and high in vitamin D and calcium.

 

This is a mildly spiced dish that goes well with naans, rotis or Anchan's butter rice.

 

Alchohol Pairing – Riesling, Pinot Grigio, crispy and slightly bitter beers.

Paneer Tikka Masala

Ingredients

Marination

200   grams paneer cut into 2 cm cubes

1        onion medium sized cut into quarter and separated into petals, approx

          15 pcs (optional)

1/2    green bell pepper cut into 2cm cubes, approx 15 pcs (optional)

4        tbsp  greek yogurt

2        tsp ginger garlic paste or 0.5" ginger (6 grams) and 2 large

           garlic cloves (6 grams) finely grated

2        tsp lemon juice

1         tbsp mustard oil or vegetable oil

1/2     tsp salt or salt to taste

4        bamboo skewers

Sauce

2       onions medium size finely chopped

2       fresh tomatoes medium size blended 180 ml or 200 ml of passata

1        tbsp ginger garlic paste or 1" ginger (10grams) and 3 large

         garlic cloves (10grams) finely grated

2       tbsp fresh coriander leaves finely chopped (optional)

3       tbsp vegetable oil

4       tbsp of double cream (60 ml)

1/2    tsp salt or salt to taste

Cooking steps  

Marination and Cooking

  • Pre heat fan assisted oven at maximum temperature. Line the baking tray. Soak the bamboo skewers for 30 minutes.

 

  • In a large bowl add yogurt, ginger garlic paste, mustard oil, lemon juice, salt, and Anchan's spice mix 1, mix all well. Add green bell peppers, onion cubes, paneer to the marination and mix gently. Marinate for minimum 30 minutes (or couple of hour).

  • Thread tikka pieces onto skewers and place on a baking tray. Cook  in the pre-heated oven for 5 minutes, turn the skewers and cook for another 2 minutes or until lightly charred.

 

Sauce Preparation

  • In a pan heat 3 tbsp of oil. Add finely chopped onions and half teaspoon of salt or salt to taste and cook stirring regularly until light onions are light golden brown.

  • Add finely grated ginger and garlic, cook for a minute.

  • Add Anchan's spice mix 2, 50 ml of water, cook for a minute.

  • Add blended tomato or passata, cook for 6-8 minutes stirring regularly.

  • Add 200 ml of water and bring to a simmer.

  • Add cooked tikka pieces, cream and Anchan's spice mix 3, cover and  simmer for 5 min

  • Garnish with coriander leaves (optional).
