TADKA DAL

One of the most common dish in almost every part of India and a staple food, tadka dal is a lentil dish with a good balance of ginger, garlic, tomato and spices. Tempering (Tadka) makes this dish more flavourful. Our spice mix along with the dal and the recipe brings the authentic flavours of India to your kitchen.

 

A mildly spiced, high in protein dish goes well with with rotis, bread,  Anchan's butter rice or any white rice.

TADKA DAL

Ingredients 

Dal

2        tbsp clarified butter (Ghee) or vegetable oil

1         onion medium size finely chopped

2        fresh tomatoes medium size finely chopped

1         green chilli deseeded and finely chopped (optional)

10       grams fresh ginger finely chopped  

4        large garlic clove finely chopped (15 grams)

2        tbsp coriander leaves finely chopped (optional)

1         tsp of salt or salt to taste

Tadka (Tempering)

1         tbsp clarified butter (ghee) or vegetable oil

1         garlic clove finely chopped

Cooking steps 

Rinse the dal until water runs clear. Drain and set aside. Skip step 1 if using instant pot.

STEP 1
 

  • Add dal and 800 ml of water to  a saucepan, bring it to a boil. Reduce the heat and simmer the dal for 30-35 minutes stirring occasionally or until the dal is soft and well cooked. Add water as needed.

STEP2

  • In a pan or instant pot, heat clarified butter. Add Anchan's spice mix 1 and cook for 10 seconds.

 

  • Add finely chopped garlic, ginger and green chilli (optional), cook until garlic turns light golden.

 

  • Add finely chopped onion, 1 teaspoon salt or salt to taste, cook stirring regularly until onions are light golden brown.

 

  • Add Anchan's spice mix 2 and 50 ml of water, cook for a minute.

  • Add finely chopped tomatoes, cook for 5 minutes stirring regularly.

  • Add cooked dal, mix well. Add water as needed, cover and cook for 10 minutes stirring occasionally.

  • if using instant pot, add the uncooked dal and 500 ml of water, pressure cook on a high pressure for 15 minutes.

 

  • Add coriander leaves (optional) give a quick stir and turn off the heat.

 

STEP 3 (Tadka)

  • In a pan heat 1 tbsp of clarified butter, add finely chopped garlic, dried red chilli from Anchan's spice mix 3, cook until garlic turns light golden. 

 

  • Turn off the heat, add Anchan's spice mix 3 (optional),cook for 10 seconds.
     

  • Immediately add the tadka to the dal, cover the dal with lid for 5 minutes.
