Tikka Masala is a rich, creamy, smooth and mildly spiced dish and one of the most liked dish in Britain. Our spice mix and our method of cooking brings out the best of tikka masala and gives this dish a good balance of taste.

 

This is a medium spiced dish that goes well with Anchan's butter rice, any rice and breads. 

 

Alchohol Pairing - Riesling, Pinot Grigio, crispy and slightly bitter beers.

TIKKA MASALA

Ingredients  (for 2-3 servings use half the quantities mentioned below)

Marination

1        kg boneless chicken thigh cut into medium size pieces

5       tbsp greek yoghurt

1        tbsp ginger garlic paste or 1"ginger (10 g)and 3 large garlic cloves (10 g)            finely  grated.

1        tbsp lemon juice

2       tbsp mustard oil or any flavourless oil

1 .25  tsp salt

Sauce

4        tbsp rapeseed oil or any flavourless oil

3       onions medium size finely chopped

3       tomatoes medium size blended (200 ml) or 250 ml passata

2       tbsp ginger garlic paste or 2" ginger (20 g) and 5 large garlic cloves

          (20 g) finely grated

2        tbsp fresh coriander leaves finely chopped (optional)

120    ml double cream

250   ml water

1        tsp salt or salt to taste

Cooking steps (for 2-3 servings use half the quantities mentioned below)

Chicken Marination and Cooking

  • To a large bowl except for the chicken add all the ingredients for marination mentioned above along with 2 packs of Anchan's spice mix 1, mix well. Now add chicken pieces mix well and marinate for minimum 1 hour.

  •  Pre heat fan assisted oven at maximum temperature. Line the baking   tray.

  • Arrange the marinated chicken pieces on the baking tray and place it in preheated oven for 15-20 minutes or until the chicken pieces are lightly charred.

Sauce Preparation

  • In a pan heat 4 tbsp oil, add chopped onions, 1 tsp salt or salt to taste and cook stirring regularly until onions are light golden brown.

  • Add ginger garlic paste, cook for a minute.

  • Add 2 packs of Anchan's spice mix 2 and 50 ml water, cook for a minute.

  • Add blended tomatoes or passata, cook for 5-7 minutes stirring regularly .

  • Add 250 ml water, bring it to a simmer.

  • Add cooked chicken pieces, cream and 2 packs Anchan's spice mix 3, stir well, cook for 5-7 minutes stirring occasionally .

  • Garnish with coriander leaves (optional).
